Right off, Amsterdam has its connotations. Say Amsterdam, and people think of pot and red lights. Leave that aside - both of these are very safe and completely inoffensive by the way - and you will visit a unique cosmopolitan centre.
The locals are very lucky to live on the concentric canals. The city essentially contains multiple concentric and interconnected lakes. Far more than Venice, and better organized, easier to understand. These are all tree-lined and act as heat buffers - as well as acting as mini-parks.
The cycling is crucial to appreciate the city, and is cheap and safe. Rent by the day or hour. So easy to pop around from the Van Gogh museum to the Nine Street shopping area, and then back to the Rijksmuseum or another.
The food varies from cheap to lush - all seems to be very fair value.
For movie goers, there is a beautiful old theatre not to be missed, seems to have been converted from an opera house
Accomodation are European - efficient use of space. We stayed at Radisson Blu - near Damplatz, and close to everything
The natives/locals were very polite and welcoming
